I think we are all quarantined and crazy about food right now. If you are like me, you are picky about your bananas and the second they have brown spots you won’t eat them by themselves, which means enter in all of the banana recipes so you aren’t throwing away food in a pandemic.
I found a couple recipes online but none fit the ingredients that I had on hand, so I tweaked and made my own version of banana muffins.
I have Celiac Disease so I of course used gluten free ingredients. I am sure if you wanted to make them with regular, they would turn out as well.
You can also substitute the strawberries for other fruit if you don’t have strawberries on hand. I also think they would be amazing with chopped pecans.
